ll archives: Chipotle Roasted Squash, Kale & Caramelized Onion Flatbread



In need of a Thanksgiving appetizer? Look no further. Garnish & Gather's Chipotle Roasted Squash, Kale & Caramelized Onion Flatbread is both flavorful and light enough to eat as you prepare for the upcoming Thanksgiving feast. Enjoy!

What you'll need:

2 cups butternut squash G&G Flatbread spice (1/4 tsp cumin, 1/4 tsp garlic powder, 1/4 tsp turmeric) 1/2 tsp chipotle powder 1/2 cup onion 1/4 tsp sugar 1/2 bunch kale 3 Tbsp tomato paste 4 oz mozzarella 1/4 cup goat cheese 2 naan breads 2 Tbsp sage olive oil salt & pepper butter

Preheat Oven & Prep Squash

Preheat oven to 400 degrees On a foil lined sheet pan, toss squash with 1/2 Tbsp oil, G&G Flatbread spice, chipotle powder, salt & pepper Bake 15 min, until just tender

Caramelize Onion

In a small sauté pan, heat 1/2 Tbsp butter & 1/2 Tbsp oil over med heat Add onions, sugar & a pinch of salt Cook 10-12 min until brown and caramelized (reserve pain and any remaining oil for later)

Prep Kale & Cheese

Remove stems and chop kale leaves In a med bowl, massage kale with 1/2 Tbsp oil, salt & pepper Thinly slice mozzarella (discard mozzarella brine) Crumble goat cheese

Assemble Flatbreads

Remove squash from sheet pan, discard foil, and raise oven temp to 425 Place flatbread on same sheet pan and spread tomato paste on top Add mozzarella slices, caramelized onion, kale, then squash Finish with crumbled goat cheese Bake flatbreads 10-12 min, until crisp

Cook Sage

Heat the pan you used for the onion, over med-high heat (add a small amount of oil if needed) Chop sage, add to hot pan & cook for 2-3 min, turning once

Plate meal and enjoy

Garnish flatbreads with crumbled sage then cut into 4 pieces
